1. Jaggery Baklava

Preheat your oven to 180°C. Grease a baking tray and layer filo sheets, brushing each layer with melted butter. After 5–6 layers, spread a portion of the chopped nuts mixed with jaggery powder and cinnamon. Repeat layering and filling, finishing with filo sheets on top.

Cut into diamond shapes before baking for about 30–35 minutes or until golden brown. Meanwhile, prepare a syrup by heating liquid jaggery, water, and rose water until slightly thickened. Pour the warm syrup over the baked baklava and let it soak for a few hours before serving.

2. Jaggery Shahi Tukda (Royal Indulgence, Naturally Sweetened)

Ingredients:

  • Bread (white bread)
  • Full-fat milk
  • Aadisha jaggery
  • Ghee
  • Cardamom powder
  • Few saffron strands
  • Chopped nuts for garnish

Method:
Cut bread slices into triangles and fry them in ghee until golden and crisp. In a separate pan, bring milk to a boil and simmer until it thickens slightly. Add grated jaggery and stir until fully dissolved. Mix in cardamom powder and saffron.

Arrange the fried bread pieces on a serving dish and pour the hot jaggery milk over them. Let it soak for a few minutes, then garnish with nuts.

  • Cardamom powder

Method:
Heat ghee in a pan and roast vermicelli until golden. In another pot, bring milk to a boil and add roasted vermicelli. Let it cook until soft.

Add jaggery bites (or powder) and stir until dissolved. Mix in dates, raisins, and nuts. Simmer for 5–7 minutes, then add cardamom powder.

Serve warm or chilled, depending on preference.
